Ingredients

  • 5 sweet onions or a combination of sweet and red onions
  • 3 tbsp. of butter
  • 1 tsp. of salt
  • 2 cups of white wine
  • 10 ounces of canned beef consommé
  • 10 ounces of chicken broth
  • 10 ounces of unfiltered apple cider unfiltered
  • Bouquet garni: bay leaf, thyme sprigs, and parsley strung together with kitchen string
  • 1 loaf of country-style bread
  • Kosher salt
  • Ground black pepper
  • Splash of Cognac (It is optional)
  • 1 cup grated Gruyere or Fontina cheese

How to make

  1. Cut the onions in a half moon shape and slice them finely.

  2. Heat the pan and add the butter and let it melt.

  3. Add the onions and add some salt and let the onions get fried.

  4. Once the onions shrink add enough wine so that the onions get covered.

  5. Now put the flame high and reduce the consistency of the syrup.

  6. Add beef consommé, chicken broth, unfiltered apple cider, and Bouquet garni.

  7. Preheat the oven with a rack.

  8. Cut the country bread in a round shape and place it on a sheet under the broiler for a minute.

  9. Season the soup with salt and pepper; put the toasted bread at the top of the soup.
