  • 2 eggs

  • 2/3 cup grated parmesan
  • 1/3 cup gluten-free breadcrumbs
  • ¾ lbs. Skinless chicken breasts

How to make

  1. Take a separate bowl and combine all the dry ingredients such as all-purpose flour, salt, paper and paprika

  2. In a different bowl, beat the eggs and milk together.

  3. In another shallow bowl or pan mix the grated parmesan cheese with the bread crumbs.

  4. Coat the chicken pieces with the flour mixture and dip the pieces of chicken in the egg mixture and then roll the chicken over the breadcrumbs pressing it properly on both sides so that it is completely covered.

  5. Place a greased baking tray and place the chicken pieces topped with 1/3 cup of tomato sauce.Layer the chicken with an equal amount of mozzarella cheese, fresh basil and sprinkle 2 tablespoons of parmesan cheese on top. 

  6. The chicken is then baked for 15-20 minutes.
