What are the ingredients of Chettinad Masala

  • One and a half tbsp. of poppy seeds or 8 cashew nuts
  • One-fourth cup of coconut grated or chopped
  • 2 tsp. of coriander seeds
  • Three fourth tsp. of fennel seeds
  • A half tsp. of cumin
  • One-fourth tsp. pepper (optional)
  • 3 to 5 pieces of red chillies
  • 2 pieces of green cardamoms
  • 3 pieces of cloves
  • 1 inch of cinnamon stick

What are the ingredients to make the Curry

  • Four boiled eggs
  • One onion large, finely chopped or paste
  • Three fourth cup of cubed tomatoes or a half cup of puree
  • 1 sprig curry leaves
  • 1 tsp, of ginger garlic paste
  • Salt to taste
  • 2 to 3 tbsp. of oil
  • Some coriander leaves

How to make

  1. Take a pan and heat it to dry the coriander seeds and roast chillies on a low flame. When you start getting their aroma, add fennel, cumin, cinnamon, cardamoms, and cloves in it. Roast it for sometimes.

  2. After this, add coconut and after sautéing, add poppy seeds. Now, toss these spices and after cooling this, powder the spices. If you want to make it a paste, then add some water.

  3. Now, boil the eggs and pierce it with forks.

  4. Next, add some oil to the pan and fry the eggs until it becomes golden brown. 

  5. After that, add more oil and fry the onions and add ginger garlic paste to and sauté until the raw smell vanishes. 

  6. Now, add tomatoes in it and after the mixture thickens add the chettinad masala paste you made previously and add some salt to taste. 

  7. Next, add the boiled eggs and coriander leaves and let the gravy let the exact consistency you need.

  8. Your chettinad egg curry is ready to serve now.
