General ingredients required
- 500g of bone-in chicken; it is best to avoid boneless chicken
- 3 tbsp of oil
- 1 large chopped onion
- 1 sprigs of curry leaves
- 1 bay leaf
- 2 pureed tomatoes
Marinating the chicken
- 1/8 tsp of turmeric
- ¼ tsp of chilli powder
- 1 tbsp of ginger-garlic paste
- 1 tbsp of thick curd
Preparing Chettinad Masalas
- 1 tbsp of poppy seeds or 8 cashews
- ¼ or ½ cup of grated coconut
- 1 tbsp of coriander seeds
- 1 tsp of fennel seeds
- 5 red chillies or 1 tsp of red chilli powder
- 4 cloves
- 3 cardamoms
- 1 inch of cinnamon stick

How to make chicken chettinad
The first step of every chicken dish is to marinate it properly. Thus, take the chicken in a bowl and marinate it good with turmeric, chilli powder, curd, salt and ginger-garlic paste. Set aside this marinated chicken to soften.
For the next step, you need to concentrate on preparing the Chettinad masalas. Take a pan and dry roast the coriander seeds and red chillies on a low flame. Add cardamoms, cinnamon stick, cumin, pepper and cloves when the coriander seeds start smelling good. Roast it well to give your recipe a mouth-watering smell and taste.
For the next step, add poppy seeds to it. You do not need to roast it; rather just toss it twice or thrice in the heated oil. Do not burn the masalas otherwise; your Chettinad would be ruined.
Once the masala is done, add the grated coconut to it. Fry it well until t smells good. You can keep this prepared masala aside, or you can just blend them in a mixture to get a good paste out of it.
