Ingredients

General ingredients required

  • 500g of bone-in chicken; it is best to avoid boneless chicken
  • 3 tbsp of oil
  • 1 large chopped onion
  • 1 sprigs of curry leaves
  • 1 bay leaf
  • 2 pureed tomatoes

Marinating the chicken

  • 1/8 tsp of turmeric
  • ¼ tsp of chilli powder
  • 1 tbsp of ginger-garlic paste
  • 1 tbsp of thick curd

Preparing Chettinad Masalas

  • 1 tbsp of poppy seeds or 8 cashews
  • ¼ or ½ cup of grated coconut
  • 1 tbsp of coriander seeds
  • 1 tsp of fennel seeds
  • 5 red chillies or 1 tsp of red chilli powder
  • 4 cloves
  • 3 cardamoms
  • 1 inch of cinnamon stick

How to make chicken chettinad

  1. The first step of every chicken dish is to marinate it properly. Thus, take the chicken in a bowl and marinate it good with turmeric, chilli powder, curd, salt and ginger-garlic paste. Set aside this marinated chicken to soften.

  2. For the next step, you need to concentrate on preparing the Chettinad masalas. Take a pan and dry roast the coriander seeds and red chillies on a low flame. Add cardamoms, cinnamon stick, cumin, pepper and cloves when the coriander seeds start smelling good. Roast it well to give your recipe a mouth-watering smell and taste.

  3. For the next step, add poppy seeds to it. You do not need to roast it; rather just toss it twice or thrice in the heated oil. Do not burn the masalas otherwise; your Chettinad would be ruined. 

  4. Once the masala is done, add the grated coconut to it. Fry it well until t smells good. You can keep this prepared masala aside, or you can just blend them in a mixture to get a good paste out of it.

  5. Now, it is the time for the entry of the marinated chicken. At first, take a pan and add oil, bay leaf and chopped onions. Fry them until they turn golden. After that, add the chicken to it and fry it for at least 5 minutes. Add tomatoes, turmeric, salt and chilli powder on the next step. Mix them well and fry them. 

  6. Finally, add the smooth ground paste to it and sprinkle some curry leaves on the top. Fry it for 3 minutes. Add 1 cup of water and cover the pan with a lid. Let the gravy thicken a little bit. And you are done!

Notes

1. Do not add cold water to your chicken Chettinad as the chicken tends to toughen.

2. Do not use boneless chicken for your chicken Chettinad recipe.

Serving & Presentation

  • The best way to garnish chicken Chettinad is with curry leaves. After the dish is done, add some fried curry leaves on top for the purpose of garnishing. Also, as it is the main course dish, you can easily serve it with rice or phulkas.
