How To Prepare Chicken Dum Biryani

Chicken is marinated and cooked with an array of spices, simultaneously Rice is steamed cook with a few spices. The two are layered upon each other and a few more aromatics and a dollop of clarified butter are added before it is steamed. Once steamed, the rice and chicken absorbs all the spices and aromatic added, making a flavoursome chicken dum biryani.

The below-mentioned recipe takes about 2 hours and 10 minutes, with 1 hour of marination time, 10 minutes of preparation time and around 1 hour of cooking time. The ingredients mentioned prepares approximately 4 servings of chicken dum biryani.

For Rice

  • Basmati Rice – 2 cups
  • Water - 2 to 2 ½ liters water
  • Cumin - 1 tsp
  • Bay leaf – 1
  • Cinnamon – 1 inch
  • Salt to taste

For Marination of chicken

  • Chicken – 500 – 600 gm with bone
  • Ginger Garlic paste - 1 tbsp
  • Turmeric - 1/8 to ¼ tsp
  • Cumin powder - 1/2 tsp
  • Coriander Powder – ½ tsp
  • Yoghurt (curd) - 1/2 cup
  • Lemon Juice – 1 tbsp
  • Biryani masala or chicken masala - 2 tsp
  • Salt to taste

For chicken dum biryani Gravy

  • Clarified butter – 3 tbsp
  • Onion – 2 medium, sliced thinly
  • Green chilies – 2
  • Ginger and garlic paste – 2 tbsp
  • Star anise – 1
  • Green cardamoms – 3
  • Black cardamom – 1
  • Cloves – 4
  • Cinnamon stick - 1 inch
  • Caraway seeds - ½ tsp
  • Bay leaf – 1
  • Biryani masala or chicken masala - 2 tsp
  • Salt to taste
  • Curd - 1 cup
  • Coriander leaves – 1/4 cup finely chopped
  • Mint Leaves – 1/4 cup finely chopped
  • Saffron a pinch
  • Warm Milk – 1/4 cup
  • Cashews – 50 grams (optional)
  • Raisins – 50 grams (optional)
  • Kewra Essence a few drops (optional)
  • Rose Essence a few drops (optional)
  • Dough – to cover the vessel

For Garnishing

  • Mint leaves – Few leaves, finely chopped
  • Saffron - 3 strand

How to make

Chicken Marination

  1. Mix yogurt, ginger and garlic paste, red chili powder, turmeric powder, cumin powder, chicken masala, coriander powder and lemon in a large bowl.

  2. Add chicken and mix well so the chicken is well coated in the margination.

  3. Let the chicken marinade for an hour.

  4. Add salt in the mixture after the chicken is marinated

Cooking rice

  1. Put water into a pan and bring to boil.

  2. Add cumin, bay leaf, cinnamon, and salt, let the water become fragrant

  3. Add basmati rice and cook it till just done.

  4. Do not over-cook the rice, a little under-done might work as it can be cooked later.

  5. Drain excess water and let the rice cool for a bit


  1. Take a thick bottom pan.

  2. Add 2 tbsp of clarified butter and let it heat on a low-medium flame

  3. Add star anise, green cardamoms, black cardamom, cloves, cinnamon stick, caraway seeds, and bay leaf.

  4. As the spices crackle, add the marinated chicken.  

  5. Sauté the chicken well for about 2 - 3 minutes.

  6. Now add thinly sliced onion, slit green chilies and ginger garlic paste.

  7. Mix well and sauté for 1 -2 minutes.

  8. Add salt and chicken masala.

  9. Beat the curd until smooth and add into the mixture.

  10. Sauté on a low-medium flame until the oil separates.

  11. Add water and continue to cook on low – medium flame for 1 minute.

  12. Put the lid and cook until the chicken gets tender.

  13. Add coriander and mint leaves to the mix

Layering and giving dum

  1. Grease a copper vessel or a thick bottomed deep pan

  2. Spread an even layer of half the rice into the pan.

  3. Top up with the chicken gravy.

  4. Add the remaining rice over it.

  5. Heat the milk separately and add saffron into it.

  6. Spread the mixture nicely over the layered chicken and rice

  7. Add cashews, raisins, kewra Essence and rose essence

  8. Add 1 tbsp of clarified butter

  9. Cover the vessel with a layer of dough, seal it properly, so no steam could escape.

  10. Cook over a low -medium flame for about 10 minutes.

  11. Let the Chicken Dum Biryani, rest for 5 – 10 minutes before removing the dough.

  12. Garnish with mint leaves and saffron strands.


If you do not want to use dough, cover the vessel with a lid and place something heavy on the lid to ensure no steam

You can add deep fried onion as a garnish, they go really well with chicken dum biryani.
