  • 2 size peeled medium carrots
  • 2 stalks of celery
  • 1/2 of a medium size turnip
  • 1 cup of shredded cabbage
  • 1/2 cup of chopped leek with the white part
  • 1 medium-size russet or other starchy potatoes
  • 2 tablespoons of unsalted butter
  • 1 medium size peeled and roughly chopped onion
  • 1 clove of peeled and crushed garlic
  • 1/2 cup of dry and white wine
  • 1 quart of vegetable broth or stock
  • 1 pinch of kosher salt
  • 1 pinch of grounded white pepper according to taste
  • 1/4 cup of the hot cream

How to make

  1. Cut the celery, turnip, and carrots into pieces of the same size. 

  2. The smaller the size, the easier it will be to puree it. 

  3. Take a potato and peel it. Also, cut into the same size as the other veggies.

  4. Take a soup pan and add butter on it.

  5. Heat the butter in a medium-low flame.

  6. Add onions and garlic in the pot.

  7. Add all the veggies except the tomato.

  8. Fry everything for about 2 to 3 minutes until the onions become a bit translucent.

  9. Now, include the wine in the pan. 

  10. Keep cooking the mixture until the wine gets reduced to half of the originally added proportion.

  11. Add the vegetable stock at this time and also increase the flame.

  12. After that, reduce the flame and let the mixture simmer for about 5 minutes. 

  13. Add potato on that mixture and cook for 15 minutes on the same flame.

  14. Let the potato to get softer. Remember, you cannot let it get mushy.

  15. Now, take the pan off the heat and allow it to cool.

  16. Once cooled, blend it in batches with the help of a blender. 

  17. Take the puree of the vegetables into the pan once again and simmer it.

  18. You can adjust the consistency by adding the stock or broth.

  19. Now add the white pepper and kosher salt for seasoning.

  20. Add the hot cream into the soup and stir it.

  22. For garnishing, you can use s swirl or a dollop of hot cream.
