  • Boiled eggs – 5-7
  • Besan – 1 cup
  • Hing (Asafoetida) – 1/2 tsp
  • Chilli powder – 1 tsp.
  • A pinch of baking soda
  • Salt to taste
  • Oil to fry
  • Pepper powder

How to make

  1. After peeling the boiled eggs, cut them into half

  2.  Sprinkle some salt and pepper

  3. In a bowl take Besan flour, hing (Asafoetida), chilli powder, baking soda and salt

  4. Add water to make a batter

  5. Dip the egg in the batter

  6. Heat oil in pan and drop dipped the egg in hot oil

  7. Keep on flipping them till they become crisp

  8. Serve with hot ginger tea

Recipe Notes

During cooking, keep the flame of the burner low. If you keep the flame high, you will end up having burnt Egg Bajji. The low flame will make sure that the bajji is cooked properly and becomes crisp. Dip egg properly in the batter so that it is covered completely. One replacement for besan is corn flour. Corn flour will make bajji crisp.
