Ingredients

  • 4 boiled eggs
  • 2 cups washed and soaked basmati rice
  • 4 cinnamons
  • 1 black cardamom
  • 4 boiled eggs
  • 2 sliced onions
  • 4 cloves
  • 1 teaspoon. garlic paste
  • 3 sliced & slit green chillies
  • 1 cup yoghurt (curd)
  • 3 tbsp. milk
  • 1 tbsp. kewra
  • 6 green cardamoms
  • 4 bay leafs
  • 2 tbsp. refined oil
  • 1 star anise
  • 1/2 tsp. mace powder
  • 1 tbsp. ginger paste
  • 1 tsp. garam masala powder
  • salt as per taste
  • few mint leaves
  • 1 pinch saffron
  • 7 cups of water

How to make

  1. Wash the rice in a proper way and soak it for 30 minutes. Then, in lukewarm water, soak the saffron.

  2. Now add oil to a pan which is in a moderate flame and after that add the sliced onions which should be fried until it reaches the golden brown colour. Then put that fried onion into a plate and put that aside. 

  3. Fry the boiled egg in the remaining oil in the plate to give it a nice texture. Also, make sure you pierce it with a fork so that the flavours get into the egg.

  4. Now take another pan and put oil into it and fry the masalas until it starts to splutter. Then you will need to add the ginger along with the garlic paste, then, sauté it.

  5. Add garam masala powder and chilli powder in the pan and after you sauté it for a few more seconds, add the yoghurt. 

  6. Add the boiled eggs and the three-fourth of the fried onions and stir the mixture well and leave it to get cooked on a low-medium flame. Cook it until the gravy becomes thick. After it is done, then you will need to remove the pan from the oven and keep it aside for later use.

  7. Now, for the preparation of biryani, take 6 cups of water and boil it. Then add the salt and the spices and allow it to heat for about 4 minutes.

  8. Now add the rice and cook it until it gets half boiled. Now take a pot and place the half or the half cooked rice at the bottom of the pot and over that layer place the eggs and the masala you cooked before.

  9. In this way make a couple more layers and then add the mint leaves and the rest of the fried onions.

  10. Now, seal the lid of the pot and allow it to get cooked on a medium flame for about 10 minutes.

  11. After 10 minutes, your egg biryani is ready to be served with chutney or raita.
