Ingredients

As the recipe is simple, the ingredients for this recipe will be quite simple and readily available in the market. To make egg curry, you will need:

  • 5-6 boiled eggs
  • 5-6 tbsp. cooking oil, i.e. canola, vegetable, or sunflower
  • three tomatoes of medium-sized which are cut into quarters
  • 2 onions of mid-size which are split into quarters
  • 2 tsp. ginger paste
  • 2 tsp. garlic paste
  • 2-3 green chillies
  • 1 tsp. cumin powder
  • 2 tsp. coriander powder
  • 1/2 tsp. red chilli powder
  • 1/2 tsp. turmeric powder
  • 1 tsp. garam masala powder

Apart from this, you can use two potatoes that are cut into 1-inch cubes. For garnishing, you may use chopped coriander leaves and green chillies that are slit according to its length.

How to make

  1. You need to add 2 tbsp. Moreover, then you will need to add cooking oil in a frying pan, and lastly, you will have to add the onions and fry them till it becomes golden brown. Now, remove the grilled onions and grind it with tomatoes and green chillies and make a paste of it. Avoid water while grinding.

  2. After that, heat the remaining 3 to 4 tbsp. Oils and add the paste and fry it for 2 to 3 minutes. 

  3. Now add all the dry spices such as coriander, cumin, and garam masala powder along with the ginger paste and the garlic paste. Then add some red chilli powder and turmeric powder and fry the whole thing until the spices or the masala get separated from the oil. 

  4. After it is done, then you will have to add 2 cups of water to the masala and mix it and then boil the whole thing on a medium flame.

  5. If you want to add potatoes, then you have to add it now and cook them until its half done.

  6. Now, slit the eggs that you have boiled vertically and add them to the gravy. After adding the eggs, you need to simmer the flame and cook it for 10 minutes. The potatoes you added will get grilled by now.

  7. Now, turn the fire off and garnish the dish with chopped and fresh coriander leaves and green chillies. 

  8. Your egg curry is now ready. You can serve it with boiled basmati rice.
