- 3 to 4 eggs
- 1/2 tsp. black peppercorn powder
- 1 tbsp. oil
- 2 tbsp. finely chopped capsicum
- 2 tbsp. finely chopped carrots
- 2 tbsp. finely chopped green spring onion
- 1 tsp. ginger and garlic paste
- 1 cup rice which will be around 200gm
- 1 tsp. of red chilli powder
- 1/2 tsp. of white pepper powder
- 1 tsp. of soya sauce
- 1 tsp. of red chilli sauce
- 1 tsp. of vinegar
- salt as per taste
How to make
Take 200 gm of rice and cook it with 2 cups of water and a pinch of salt.
After that spread the cooked rice on a plate and allow it to get cooled.
Make sure that every rice grain is separated from each other.
Now take a bowl and beat four eggs with a little bit of salt and pepper. You need to beat the eggs really well in order to make it fluffy.
Now take a pan and add some oil and allow the oil some time to get hot.
Afterwards, add the beaten egg and allow it to get cooked on a lower flame for a few minutes.
Then scramble the eggs completely and allow it to get cooked even further until they get totally cooked. After that, take a bowl and keep the scrambled eggs aside.
Now, add some more oil into the pan and add the finely chopped vegetables.
Then you will have to add the ginger. After this add the garlic paste and sauté the whole thing until there is no raw smell.
Now add the cooked rice and sauté it for few a minutes on a medium flame.

After sauteing for 3 to 4 minutes, add soya sauce and red chilli sauce and mix it well with the other things already in the pan.
Now finally add some vinegar and sauté the whole thing will.
Add the scrambled egg and let the mixture get cooked on a low flame for 3 to 4 minutes.
Your egg fried rice is ready now, you can serve it by garnishing with green spring onions.

In order to get perfectly cooked egg fried rice, keep sautéing the rice after adding each and every ingredient.
You can use basmati rice as well to make the recipe tastier.
