- 4 boiled eggs
- 2 tbsp. of oil
- half to 1 tsp. cumin or jeera
- 1 to 2 sprigs of curry leaves or mint leaves
- 1 cup of finely chopped onions
- 1 chopped green chili
- 1 tsp. of ginger and garlic paste
- 2 tomatoes finely chopped or pureed
- 8 cashews or 4 tbsp. of coconut (optional)
- 1/8 tsp. of turmeric
- ¾ tsp. of red chili powder
- ¾ to 1 tsp. of garam masala powder
- 1 tsp. coriander powder
- salt to taste

- 3 tbsp. of coriander leaves for garnishing

How to make
Heat the pan and then add cumin seeds and curry leaves and let them splutter. After that, add onions and fry it till it becomes golden brown.
Then add the ginger-garlic paste and sauté the mixture.
The add tomato puree and chopped tomatoes and sauté the whole mixture until it gets the raw smell of the spices goes away.
Now add turmeric, salt, chilli powder, coriander powder, and garam masala until the raw smell of the spices goes away.
Now you will have to add the boiled eggs, after that mix them with the spices well.
Add some water in order to make the gravy.
Now cover the pan and let it cook on a medium flame for few minutes.
After that open the lid of the pan and see whether the gravy has turn thick and whether the oil starts to appear on the gravy. Add the salt if it is needed and coconut milk if you want.
Now spread some coriander leaves for garnishing after switching the stove off.
Now your egg masala is ready and you can serve it with chapati or rice.
