- 2 cup - boiled pasta
- 2 - Egg
- 2 - Green chillies chopped
- 1 - large Onion finely chopped
- 1/2 - bunch coriander finely chopped
- A few sprigs of Curry leaves
- A pinch Turmeric
- Salt to taste
- Oil - 1 tbsp
- 1 cup – grated cheddar cheese
How to make
Boil the pasta in plenty of water with a teaspoon of oil and salt. Make sure you don’t overcook the pasta.
Wash the boiled pasta under cold running water and allow to drain.
Heat oil in a pan, add some chillies and curry leaves.
Add chopped onions and fry till the colour changes to translucent.
Beat eggs in a bowl with salt and half of coriander leaves and a pinch of turmeric.
Add the beaten eggs to onions in the pan and keep on stirring till the eggs and onions are well mixed.
Add the boiled pasta.
Check seasonings and garnish with chopped coriander leaves and oodles of grated cheddar cheese.
