  • 5 eggs hard boiled
  • 1 cup of chopped onions
  • 2 pieces of green chillies
  • 1 sprig of curry leaves
  • One-fourth tsp. of cumin
  • One-fourth tsp. of mustard
  • 1 Pinch of fenugreek seeds
  • 2 tbsp. of chopped coriander leaves
  • One-eighth tsp. of turmeric
  • 2 tbsp. of Oil
  • 1 tsp. of jaggery or sugar as required
  • Salt to taste
  • A half three-fourth tsp. of red chilli powder
  • Tamarind
  • A half three-fourth tsp. of Coriander powder
  • One-eighth tsp. of cumin powder

How to make

  1. Use hot water to soak the tamarind and get the pulp out.

  2. Take a pan and heat the oil in it.

  3. Add mustard cumin, and methi and when they start to splutter add the curry leaves and sauté the whole thing.

  4. Add onions, green chillies, and salt and continue to fry the mixture.

  5. Now add coriander, cumin, turmeric, and red chilli powder. 

  6. Add the boiled eggs in the mixture and fry it and after two minutes add the tamarind pulp.

  7. Mix everything properly and cook the mixture for four minutes. If you like to add some sweetness to your dish then this the right time to add some jaggery or sugar.

  8. Now add water and to partially cover the egg and simmer the whole mixture for about eight minutes. At this time, adjust the taste of salt and tamarind.

  9. Switch the stove off and add some coriander leaves for garnishing. Your egg pulusu is now ready to be served.
