Ingredients

For Hyderabadi biryani

  • 1 ½ cup of basmati rice
  • ½ kg Chicken
  • ¼ to ½ tsp. biryani masala powder
  • 1 large onion or 1/3 cup fried onions store bought
  • 4 tbsp. coriander leaves
  • 4 tbsp. mint leaves
  • 4 tbsp. Oil
  • 2 tbsp. ghee
  • ¼ tsp. saffron strands

Marination

  • 1¼ tbsp. Ginger Garlic Paste
  • ¼ tsp. turmeric
  • 1 to 2 green chillies slit
  • 2/3 cup yoghurt or fresh curd
  • 2 tbsp. Lemon juice
  • 1 to 1 ½ tsp. red chilli powder
  • 1 to 1 ½ tsp. biryani masala powder
  • ¼ to ½ tsp. green cardamom powder
  • ¾ tsp. Salt

Whole spices for rice

  • 7 cups of water
  • 1 to 1 ¼ tsp. salt
  • 1 tsp. oil
  • 3-inch cinnamon piece
  • 6 cloves
  • 4 green cardamoms
  • 1 bay leaf
  • 1-star anise
  • 2 strands mace
  • 1 black cardamom
  • ½ tsp. caraway seeds

How to make

Fried Onions

  1. Heat oil (4 tbsp.) oil in a pan and add sliced onions in it.

  2. Fry the onions by stirring regularly until it becomes golden brown.

  3. Separate the oil as you will need it at the time of marination.

Marination

  1. Add salt, turmeric, yoghurt, chilli powder, biryani masala, cardamom powder, and other ingredients such as green chillies, ginger garlic paste, and lemon juice inside a bowl and mist the whole thing in a proper manner avoiding any lumps. 

  2. Now add the chicken pieces and keep the marinated mixture for at least 2 hours. For best results, you should keep it marinated overnight.

Preparation of Rice

  1. Wash the rice and soak it up for 30 minutes and drain it off.

  2. Add 6 to 7 cups of water in a pan. Now add 1 tbsp. oil, salt to taste, and the whole spices.

  3. Boil the water for about 5 to 6 minutes till the aroma starts releasing.

  4. Add the rice and cook about 75%. Don’t cook it totally or don’t make it mushy.

Preparation of Biryani

  1. As you cook the rice, take a pan and transfer the marinated chicken in it. 

  2. Add oil, fried onions (half), coriander, and mint.

  3. Spread the marinated chicken evenly in the pan in a layer.

  4. Now add the rice in a layer and sprinkle fried onions, coriander, and mint

  5. Pour saffron milk and sprinkle the biryani masala.

Biryani

  1. Place the whole thing in a tawa and get the flame on a medium-high flame. Cook 20 minutes in this way.

  2. Reduce the flame and cook for 15 minutes.

  3. Switch off the flame and let it rest for about 20 to 30 minutes.

  4. Your Hyderabadi Biryani is ready to serve.

  5. Serve it hot with raita.

Notes

  1. If you dislike biting the whole spices then you can tie them up in a muslin cloth and put it in the pot while cooking. After that, you can discard the whole spices as the flavours will already be inside the dish.
  2. Avoid using sour curd or flavoured ones.
  3. If you like to give the chicken a brownish flavour then one option you have is cooking the biryani on a medium-high flame for the last 5 minutes.
  4. If you want to keep the stream inside then you can seal the pot with dough or you can use aluminium foil for the same.
