The following ingredients are for 1 serving.
- Oil - 1 tablespoon
- Onion - 1 small sized
- Spring onions – 1
- White Button mushrooms - 125-150 grams
- Basmati rice – ½ cup
- Green chilies (optional) – 1-2
- Garlic cloves – 2 – 4
- Soya sauce – ¾ teaspoon
- Vinegar (optional) – ¾ teaspoon
- Black pepper powder – as required
- Salt – as per taste
- Water for cooking rice – 2 ½ cup
- Clarified butter – ½ teaspoon

Step By Step Instructions for Cooking Mushroom Fried Rice
Preparation for Mushroom Fried Rice
Keep the water for boiling, add clarified butter and some salt in it. Rinse the rice in water thoroughly until the water runs clear of starch. As the water comes to a boil, add the rice. Let the rice cook for about 5 – 7 minutes, the rice should be al dente or just cooked. Drain the excess water in a colander and the rice cool down.
Rinse the mushroom thoroughly with water to remove any dirt or grime. Before chopping, pat them dry with a clean napkin. Chop the mushroom in medium-thin slices.
Prepping vegetables – julienne the onions.
Deseed green chilis and julienne them as well. Finely chop the white and the green portion of the spring onion separately. The spring onion white would be added to the Mushroom Fried Rice while the green part will be used for garnishing. Either crush the garlic or finely chop it.
How to make Mushroom Fried Rice
Add oil into a wok or a pan. Once heated add garlic and fry it till its turns aromatic. Add spring onion white and onion, sauté them for about a minute on medium flame. Add green chili and mushrooms, stir fry them for about 2 – 3 minutes or the mushroom starts to get tender.
Before moving to the next step, ensure that the water released by mushroom is dried out as the water may hinder the caramelization. Add soya sauce and vinegar, mix well so the sauce coats the veggies nicely. Turn the flame of high, to allow the mushroom and other vegetables to be caramelized.
As the mushrooms start turning brown from the edges, add salt and black pepper powder. Give it a good mix. Add the cooked rice and toss them around once or twice, so that everything is thoroughly mixed. If needed, add a few drops of water to help the mixing process. Switch off the heat and place a lid on the wok.
Transfer Mushroom Fried Rice in a bowl and garnish with green onions.
