Ingredients

  • 100 gm chopped mushroom
  • 1/4 teaspoon garlic paste
  • 1 green chilli
  • 1 teaspoon powdered corn flour
  • 1 handful coriander leaves
  • 3 pinches salt
  • 2 chopped spring onions
  • 1/4 teaspoon ginger paste
  • 1 medium finely chopped onion
  • 1 teaspoon powdered red chilli
  • 1 teaspoon lemon juice
  • 5 leaves curry leaves
  • 1 cup sunflower oil
  • 1/2 teaspoon garlic paste

How To Make Mushroom Fry?

  1. To start with, you should clean the mushrooms in running water.

  2. Soak them for about 20-30 minutes in lukewarm water and add a pinch of salt to them.

  3. You may parboil the mushrooms to reduce the cooking time as that will make them soft and tender.

  4. Once this has been done, you can take a separate bowl and mix the ginger garlic paste, corn flour, 1/2 teaspoon of red chilli powder, salt, and lemon juice in a bowl.

  5. Add a little water to it and mix all well.

  6. Add mushrooms and mix until they are evenly coated with the spices.

  7. Allow the marinated mushrooms to absorb the spice blend.

  8. Heat oil in a deep-frying pan over low to medium flame.

  9. Once the oil gets heated, you can leave the mushrooms in it and fry them until they turn crispy and golden brown in appearance.

  10. Remove the mushrooms and drain out the excess oil.

  11. Heat a small quantity of oil in a different pan. Sauté the green chillies, ginger, garlic, curry leaves, and onions for 2-3 minutes.

  12. Add fried mushrooms and red chilli powder.

  13. Stir well and cook for 3-6 minutes.

  14. Garnish it with spring onions and coriander leaves. You may serve it with sauce or chutney. This dish can also be served with an elaborated meal.
