Ingredients

  • Pasta – 3/4 cup
  • Mushroom – 1/4 cup(tightly packed)
  • Capsicum – 2 tbsp finely chopped
  • Garlic – 1/2 tbsp finely chopped
  • Oregano – a pinch
  • Pepper powder – 1/8 tsp
  • Cheese(grated) – 1 tbsp
  • Maida – 1 tbsp
  • Milk – 1/2 cup
  • Pepper powder – 1/2 tsp
  • Salt – to taste
  • Butter – 1/2 tbsp
  • Oil – 1/2 tsp

Preparation For Mushroom Pasta

  • Boil water in a large pot and add salt.
  • Cook macaroni until it gets cooked properly.
  • Drain and rinse well. Add a few drops of oil, toss and set aside.

How to make

  1. Start by heating some butter in a deep non-stick pan.

  2. When the butter melts, add chopped garlic to the pan and sauté till golden.

  3. Now add chopped mushroom and capsicum. Garlic is the basic flavour giver of any Italian dish. Putting vegetables like mushroom, capsicum adds more flavour to your pasta.   

  4. Sauté mushroom and capsicum on a medium flame for 3 mins till the mushrooms get cooked. We do not have to overcook as it will change the taste of the pasta.

  5. Now add maida. Butter and maida when cooked together form a roux, which will thicken your sauce. Cook till slightly browned. When you add any liquid to this mixture, it is bound to get thickened.

  6. Gently cook on a medium flame for 3 mins, while stirring occasionally

  7. Now add milk and stir continuously. Milk will start getting thicker. 

  8. Add oregano for good flavour.

  9. Now finally add the boiled macaroni, salt and pepper. 

  10. Mix gently and cook on a medium flame for 2 mins or till the pasta gets heated through and gets the flavour of the sauce. 

  11. Serve this pasta hot and garnish it with cheese and with a side of garlic bread.

Notes

  • You can avoid putting capsicum if you just want mushrooms in your pasta.
  • You can also add other veggies like corns, broccoli to enhance the flavours of your pasta.
  • You can use different types of pasta like spaghetti, macaroni, elbow pasta or fusilli.
  • Serve immediately as pasta sauce dries up quickly. In case your pasta dries up, add a little milk while heating up.
  • Add more cheese if you like. Be generous while making mushroom pasta for kids.
