A beautifully simple dish that will take about 40 minutes to prepare, 15 minutes of prep time and 25 minutes of cook time. In simplest of terms, Mushroom Pepper Fry is prepared by sautéing Onion, Mushroom, and Capsicum with a mix of black pepper and fennel powder. The below-mentioned recipe and ingredients are for 2- 3 servings.
- Sliced Button Mushrooms - 1¼ cup mushrooms
- Onion – 1 medium sized
- Capsicum or Bell pepper – 1 medium sized
- Peppercorn – 1 Tsp
- Fennel – ½ Tsp
- Garlic – 2 -3 cloves
- Cumin – ½ Tsp
- Tomato – 1 large (deseeded or pureed)
- Curry leaves - 1 -2 sprig
- Green chilies(optional) - 1 to 2
- Salt – as per taste
- Turmeric – a pinch
- Oil/Clarified butter(ghee) - 1 Tbsp

Preparation for Mushroom Pepper Fry
Pepper and fennel powder:
Dry roast the peppercorn for a few minutes or until it releases its peppery smell. Add roasted peppercorn and fennel seeds into a dry blender, grind to a coarse powder.
Chop the mushroom
Wash the mushroom and pat dry with a clean napkin to remove excess moisture. Trim thin slices from the ends of the stems, cut the mushrooms into halves or quarters depending upon the size of the mushroom. Note that for Mushroom Pepper Fry, medium slices of mushroom is preferable.
Chop other ingredients
Julienne onion and capsicum, deseed the tomato and cut into dices or puree the tomato instead, either crush garlic clove or chop into small pieces. If using green chilies, deseed and slice thinly.
Recipe for Mushroom Pepper Fry
Add oil/ghee into a thick bottomed pan. Once heated add cumin. Add garlic when the cumin starts to splutter. Cook garlic for about 1 minute, don’t let it burn.
Add chopped tomato or puree, a sprinkle of salt and turmeric. The salt aids the tomatoes to cook quickly. Cook the tomato on medium-high flame until it turns mushy and soft, a lid will further speed up the process.
Maintain the medium-high flame and add onion, capsicum and green chili. Sauté them for 2 -3 minutes until the raw smell goes away. Overcooking will take the crunch away from them, so avoid that.
Now it’s time to add the mushrooms in Mushroom Pepper Fry. Let it cook for 2 – 3 minutes on medium-high flame. Add the pepper, fennel powder, salt, and curry leaves. Cover with a lid and reduce the flame to lower settings.
Let it cook for another 2 – 3 minutes, till the mushroom goes a little tender. Note that, mushrooms will initially release water, continue to sauté until the water is fully evaporated.
Give a good mix and switch off the flame and taste the freshly prepared Mushroom Pepper Fry, add salt or pepper if required.
