Ingredients

  • 1/2 cup chopped mushroom
  • 3 tablespoon refined oil
  • 1 teaspoon salt
  • 1/2 lemon wedges
  • 1/2 cup basmati rice
  • 1/2 cup shelled peas
  • 2 black cardamom
  • 4 bay leaf
  • 1 teaspoon ginger paste
  • 1-inch cinnamon
  • 4 green cardamom
  • 4 cloves
  • 3 tablespoon sliced onion
  • 1 teaspoon garlic paste
  • 1/2 cup butter

How to make

  1. Soak the basmati rice and mushrooms separately in water for an hour each. Thereafter, simply drain the water and keep them both separately and aside for a few minutes. Then, cut the mushrooms in medium-sized pieces.

  2. Now it is time to heat the oil over medium-high flame in a deep bottomed pan. Add the sauté and whole spices once the oil is sufficiently hot till they turn fragrant. It is important to keep stirring in-between the entire process so that the spices don't end up getting burnt.

  3. Add sauté and onions once they have turned pinkish and after the raw flavour of the spices is gone. Now, add ginger garlic paste to it after it has turned slightly translucent. Cook for about 2-4 minutes at moderate flame. Thereafter, add rice, peas, and mushrooms after the masala mix has started to dried up and cook for additional 3-4 minutes while stirring it continuously.

  4. Add butter, juice of half a lemon, 3 cups of water, and salt. You can reduce the flame after the water reaches the boiling point. After this, cook with a covered lid for about 15-25 minutes or till entire water gets absorbed. You may check after every 3-4 minutes to find out if the rice is fully prepared.

  5. Once the rice is fully cooked, remove from flame and leave it uncovered for 10-15 minutes. This will help the rice from turning soggy. Now, transfer the Mushroom Pulao in a serving bowl and serve to your loved ones with a papad or raita of choice.
