Ingredients

  • 2 tablespoons olive oil
  • 8 tablespoons butter, softened, divided
  • 4 large mushroom caps, gills removed and sliced
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 tablespoons mayonnaise
  • 3 tablespoons fine cheese
  • 1/8 teaspoon onion powder
  • 8 slices sourdough bread
  • 2 teaspoons minced fresh thyme
  • 1/2 cup shredded sharp white cheddar cheese
  • 4 ounces Brie cheese, sliced and rind removed
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup shredded Gruyere cheese

How to make

  1. Heat olive oil and two tablespoon butter over medium-high heat. 

  2. Fry mushrooms till it turns golden brown and begin to crisp. Stir for 10-12 minutes. 

  3. Sprinkle with salt and pepper and remove mushrooms.

  4. Now spread 2-3 tablespoons butter on one side of each slice of bread. 

  5. Place bread with butter side down in a skillet over medium-low heat and toast till golden brown.  

  6. Mix remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder in another bowl.

  7. To make sandwich, sprinkle with fresh thyme and cheese of 4 toasted bread top. 

  8. Sprinkle the cheddar cheese mixture evenly over it. 

  9. Cover the top with remaining bread slices and toast it 

  10. Now spread the butter-mayonnaise mixture on the outsides of each sandwich.

  11. Then place in the same skillet and cook till it turns golden brown and cheese is melted

  12. Serve hot instantly with sauce.
