- 2 tsp cooking oil
- 1 tbsp unsalted butter
- 2 tbsp onion, finely chopped

- 3 cups veg stock/water
- ½ tsp pepper, crushed
- few thyme herbs (optional)
- salt to taste
- ¼ cup of fresh cream or milk
How to make
Heat oil and butter in a pan.
Once oil and butter get heated, add onions and garlic.
Saute them for 1-2 mins or till they just raw smell goes off.
Add sliced mushrooms and saute for a minute and simmer for 5 minutes.
Keep stirring and cook the mushrooms till they shrink slightly.
Now add refined flour and saute till the raw smell disappears. Refined flour will help to thicken the soup.
Furthermore, add vegetable stock or water.
Add crushed pepper, thyme (optional) and salt to taste.
Stir well and let the mixture boil for 5 mins.
Add cream for creamy texture of the soup. Replace cream with milk if you are health conscious.
Stir and let it simmer for few minutes. Don’t boil, as cream might curdle.
Keep stirring till the time soup turns creamy and have a thick consistency.
Serve Mushroom Soup piping hot topped with extra cream and pepper.
