  • Button Mushroom – 200 – 250 grams
  • Onion – 2 medium sized or 130 – 135 grams
  • Cumin – ½ teaspoon
  • Turmeric powder – 1/8 teaspoon
  • Kashmiri red chili powder = ½ teaspoon
  • Coriander powder – 1 teaspoon
  • Green chili – 1 piece
  • Oil – 2 Tablespoon
  • Dry fenugreek leaves – ½ tablespoon
  • Salt – as per required
  • Coriander leaves – 1 – 2 tablespoon

  1. Clean and chop the mushroom

  2. Wash the mushrooms thoroughly to clean the dirt off it. Use a clean napkin to pat dry the mushrooms in order to remove excess moisture. Trim thin slices from the ends of the stem and cut the mushrooms into halves or quarters depending upon their size. For a good caramelization, medium slices of mushroom are preferable.

Step by Step Recipe for Mushroom Stir Fry

  1. Add oil to a thick bottomed pan. Once heated add cumin, add onions once the cumin starts spluttering. Sauté the onions on a low flame for 5 – 6 minutes or until they turn little brown. After all, a good Mushroom Stir Fry needs some good caramelisation on those onions. 

  2. Next add Mushroom to the mix, sauté them on a medium high flame for about 2 minutes. The mushroom will release water, add some salt at this stage and sauté them with patience switching between medium and low flame until the water dries up.   3. Add turmeric powder, Kashmiri red chili powder, garam masala, coriander powder, green chilies and give them a good mix. Check the salt and add more if required. Add dry fenugreek leaves and switch off the flame. Cover with a lid and let the Mushroom Stir Fry sit for about 10 minutes. 

  4. Add coriander leaves on top before serving, serve along with rice or bread. 

Notes

  • Mushroom release water while cooking, so you do need to add additional water as it will take the caramelization effect we are looking at.
  • Mushrooms cooked be easily over cooked and for a dish like Mushroom Stir Fry that sort of solely depends on mushrooms, the whole is dish is spoiled.
  • Spice in the current recipe is kept minimalistic, if required add more spices via adding more green chilies or the red chili powder.
