For Marination

  • 1/2 kg mutton (cut to any size)
  • 1 tsp. red chilli powder
  • 1 tsp. biryani masala powder
  • 1 tbsp. ginger garlic paste
  • 1/4 tsp. turmeric powder
  • 1/2 cup yogurt or yoghurt (do not use a sour one)
  • 1 or 1/2 tbsp. lemon juice
  • 1 tbsp. oil
  • 1/2 tsp. Salt
  • 2 tbsp. raw papaya paste (optional)

For Rice Cooking

  • 2 cup basmati rice aged (soaked for 20 minutes)
  • 8 cups of water
  • 1 bay leaf
  • 1/2 tsp. shahi jeera
  • 3 cloves (optional)
  • 1 cinnamon – a small piece
  • 3 green cardamom

For Gravy: Whole Spices

  • 1 bay leaf
  • 3 tbsp. Oil or ghee
  • 4 green cardamoms
  • 3/4 tsp. black cumin
  • 1-star anise
  • Cinnamon 2 inch

Other Ingredients

  • 1 cup onions sliced thinly or 1/3 cup fried onions
  • 2 green chillies
  • 4 tbsp. coriander and mint
  • 1/2 cup yoghurt or curd (room temperature)
  • 1 pinch saffron soaked in 2 tbsp. of hot milk

How to make

Marinating Mutton

  1. Wash mutton properly and add ginger garlic paste, turmeric, salt, biryani masala, red chilli powder, and lemon juice.

  2. Add oil, curd, and raw papaya paste.

  3. Keep the marinated mutton for about 4 hours.

Cooking the Mutton

  1. Take a bottom heavy pan and heat oil it in. You can use ghee here as well. 

  2. Add all the spices

  3. Add sliced onions and green chillies and fry it till it gets brownish.

  4. Add the marinated mutton.

  5. Add coriander or mint leaves.

  6. Sauté the mixture at a low flame for about 4 to 5 minutes.

  7. Cover up the pot with the lid and cook for 10 minutes.

  8. Transfer it to a pressure cooker and cook it for 3 to 4 whistles.

  9. The mutton for the biryani is now prepared.

Rice Cooking

  1. Boil the water; add salt and spices in it such as cardamom, bay leaf, cloves, etc.

  2. Add the soaked rice.

  3. The rice must be cooked properly so that you feel every bite.

  4. Use a colander to drain the water from the rice.

The Making of the Mutton Biryani

  1. Once the meat is cooked, you will a thick gravy in which you need to add curd, coriander, fried onions, and mint leaves and mix it properly.

  2. Now, layer the rice over the mutton and add ghee.

  3. Also, add coriander leaves and a mixture of milk and saffron.

  4. Heat a tawa or griddle till it gets very hot. 

  5. Place the biryani pot over it by covering the pot properly.

  6. Lower the flame and keep it there for 15 minutes.

  7. Your mutton biryani is ready to serve now.

  8. Serve it along with raita and sliced vegetables.


  • It is highly advised that you use a bottom heavy pressure cooker to cook the mutton even if you are cooking with the dum process.

  • The timing will vary as per the pot you use.

  • Make sure that your rice does not get mushy. If it gets slightly overcooked then that would be fine. You can rescue the situation by sprinkling a little bit of salt and oil and tossing the rice while it is still on a colander.
