- 1 tablespoon unsalted butter
- All purpose flour
- 3 tablespoons olive oil
- 12 ounces mushrooms, cleaned and quartered
- 1 medium onion, chopped
- 1 teaspoon kosher salt
- 1/3 cup all-purpose flour
- 1/2 teaspoon freshly ground black pepper
- 2 cups heavy cream, at room temperature
- 2 cups grated Pecorino Romano
- 1 3/4 cup whole milk at room temperature
- 2 cups shredded mozzarella
- Two 5-ounce bags baby spinach, coarsely chopped
- 1/4 packed cup chopped fresh basil
- 2 cloves garlic, minced
- 1/8 teaspoon kosher salt
- 1 recipe Fresh Pasta
- 2 cups cake flour
- 1 1/2 cups shredded mozzarella
- 1 cup all-purpose flour, plus extra for dusting
- 1/4 cup extra-virgin olive oil
- 4 large egg yolks, at room temperature
How to make
Preheat the oven to 340 degrees.
Butter a glass or ceramic dish plate and keep aside.
Heat oil in a pan and saute onion and mushroom over it by adding salt and pepper.
Make the sauce by whisking cream, milk and flour. Add mozzarella and wait for sauce becomes smooth.
Add spinach, basil, salt, pepper and garlic. Now sauce is ready.
Now add mushroom to sauce and stir. Keep aside.
Cut pasta dough in quarters and press it.
Using pasta rolling machine, make the pasta dough roll into 1/8th of inch flat.
Now spread the sauce on the baking dish.
Spread 2 layers of pasta and then spread sauce. Repeat this step many times.
