Whole Spices

  • 1 bay leaf
  • 4 green cardamoms
  • 1 star anise
  • 2 inch cinnamon
  • 6 cloves
  • ½ tsp. cumin
  • 1 tbsp. lemon juice

Veg Biryani Ingredients

  • 1 and a half cup basmati rice
  • 1 potato cubed
  • 1 carrot chopped
  • One-fourth cup green peas
  • 1 medium onion sliced
  • A handful of mint leaves chopped
  • A handful of coriander leaves chopped
  • 1 to 2 green chillies (slit)
  • 1 and a half to 2 tsp. Biryani Masala Powder
  • 1 small tomato (optional) chopped
  • 2 and a half cups water or thin coconut milk
  • 2 to 3 tbsp. Oil (or ghee)
  • 10 fried cashews or fried capsicum for garnish (optional)

How to make

Preparation of Biryani

  1. Soak the rice up well for about 30 minutes and drain it well.

  2. Chop the veggies and keep it aside. 

The Making of Veg Biryani

  1. Add oil to a pot and heat it. 

  2. After this add whole spices in it and fry for about two minutes and see whether the aroma arises or not. 

  3. Now add green chillies and onions.

  4. Add ginger garlic paste and sauté it till the raw smell of the paste goes away. 

  5. If you are using tomatoes then add it now.

  6. Add veggies and fry it for about 2 minutes.

  7. Add biryani masala and mint leaves and sauté for 2 minutes.

  8. Measure two and a half cup of water or coconut milk. Add lemon juice and salt. While cooking the recipe in the pot, you should include 2 and a three-quarters cup of water.

  9. When the water comes to the boiling state, add rice in it. 

  10. Cover the pot and keep on a low flame till the water gets absorbed. If the rice gets fully cooked, turn the flame off.

  11. Your veg biryani is ready to serve.

  12. Serve it with raita to make it taste more delicious.


  • If the rice of the biryani is not cooked properly then you can sprinkle some water and cook it for a few more minutes. Make sure that the rice does not get mushy as it will ruin the taste of the biryani.
  • If you don’t want to make biryani masala at home then you can bring it from the store as well.
  • The amount of masala you use will depend on your taste. Remember, too much use of masala can also ruin the taste of the dish.
