Ingredients

Preparation of Rice

  • 2 or 3 cups of basmati rice
  • 2 litre of water
  • 1 bay leaves
  • 2 tsp of cumin powder
  • 2 inch of cinnamon stick
  • 3 or 4 cardamoms
  • 4 cloves if you wish it to be there

Preparation of Gravy

  • 3 tbsp of oil
  • 3 green and 1 black cardamoms
  • 2 onions sliced
  • 4 cloves though it is optional
  • 1 bay leaf
  • 2 inch of cinnamon stick
  • ½ of shahi jeera
  • 1 tbsp of ginger garlic paste
  • ¼ tsp of turmeric powder
  • 2 tsp of biryani masalas or chicken masalas readymade
  • 500g of chicken
  • 1 tsp of red chilli powder
  • 2 green chillies sliced neatly
  • mint leaves
  • coriander leaves chopped finely
  • 1 cup of thick curd

How to make

How to make chicken dum biryani

  1. At first, wash the basmati rice properly with clean water and drain it after soaking it for 30 minutes. Add 10 cups of water to a pot and start heating it after you add bay leaf, shahi jeera, cardamom, cinnamon stick and cloves to it. When the water starts boiling, add the drained rice and salt to it. Cook it until the rice is all softened and perfect for the biryani.

  2. While the rice is getting all prepped up, you should all be preparing for the gravy. At first, fry the sliced onions until they turn a little brown. Lower the flame and add all the ingredients have been mentioned for the gravy in the pan. Stir it a little for 5 minutes. 

  3. Now, add the chicken to it and also add biryani masalas or chicken masalas to it for the smell. Add turmeric powder and green chilli as well. Cover the lid and cook it for 3 or 4 minutes. Now, you can add the thick curd to this mixture and start stirring it well. Cover it with the lid and lower the flame until the gravy thickens. Add salt according to your taste. 

  4. At this point, open the lid and sprinkle some chopped coriander leaves and mint leaves on top of it. Now layer the rice evenly and decorate it with fried onion and mint leaves. Cover the pot with a foil and leave it there to boil. After 10 or 15 minutes, open the lid and stir the mixture a little. The chicken dum biryani is done!

Notes

Use 1 tsp of Kewra water or hot milk with a pinch of saffron for an authentic touch to your chicken dum Biryani
